Mediterranean Feta Bake

This is a quick and simple dish that’s great for a cold winters night. It serves 2-3 people and takes about 20-minutes to make. You can serve this was wholegrain crusty bread or a simple side salad.

Preparation of the base.

Ingredients:

  • 1 x 400g Tinned tomatoes

  • 200g feta

  • 1/2 cup pitted kalamata olives

  • 1.5 cups halved cherry tomatoes

  • 1 x Garlic clove (chopped)

  • 1 x tsp Italian herbs

  • 2 x tbsp fresh parsley

  • Drizzle EVOO

  • Cracked Black pepper

  • Lemon juice

Method:

  1. Preheat oven to 180 degrees.

  2. Mix olives, tomatoes, garlic, herbs, half of the parsley, and pepper in a small bowl.

  3. In a roasting dish, spread the tomatoes across the bottom and lay the feta on top. Spoon the remaining olive/herb mix over the feta.

  4. Bake for 15-20mins.

  5. Feta needs to have really softened before you remove from the oven.

  6. Season with black pepper (You won’t need salt as the olives and feta are enough).

  7. Drizzle over EVOO and the rest of the parsley.

  8. Add a squeeze of lemon.
